What Is Cocoa?
Cocoa originates from Theobroma cacao — Latin for "food of the gods" — a tree native to the deep tropical regions of Central and South America. Today, it is cultivated across the equatorial belt worldwide, forming the backbone of the global confectionery and food ingredient industry.
The cacao pod contains 20–50 seeds (cocoa beans) surrounded by a sweet pulp. After harvesting, the beans are fermented, dried, roasted, and processed into the various cocoa products that power the world's most beloved indulgences.

The Process
Every piece of chocolate begins a remarkable journey in a tropical farm.
Cacao trees are grown within 20° of the equator, thriving under a canopy of shade trees in humid tropical climates.
Ripe pods are hand-harvested with machetes twice a year. Each tree yields 20–30 pods annually.
Beans are fermented for 5–7 days, developing their complex flavour precursors. This is the most critical quality step.
Beans are sun-dried to 7% moisture, graded, bagged, and shipped to processing facilities globally.
Beans are roasted, cracked, winnowed, and ground into cocoa liquor, then separated into cocoa butter and cocoa powder.
